Fermentation management for rot infected grapes

Wet weather during the growing season can lead to mildew, rot, and botrytis infections on fruit. Rot infections can cause a number of complications for the winemaking process:

  • Risk of moldy or compost-like aromas in the wine
  • Rapid oxidation of juice or wine
  • Fermentation problems due to toxins from rot
  • Alteration of must and wine color
