Fermentation management for rot infected grapes
Wet weather during the growing season can lead to mildew, rot, and botrytis infections on fruit. Rot infections can cause a number of complications for the winemaking process:
- Risk of moldy or compost-like aromas in the wine
- Rapid oxidation of juice or wine
- Fermentation problems due to toxins from rot
- Alteration of must and wine color
