REDSTAB™ is intended for wine stabilisation vis-à-vis potassium bitartrate crystallisation and coloring matter instability.
Potassium polyaspatate provides effective stabilisation of wines with regards to tartrate precipitation of potassium bitartrate by having an action on the inhibition of microcrystal nucleation and growth phases (via disorganisation of the surface of the crystal, which blocks crystal formation); while the selected purified gum arabic Verek stabilises the coloring matter of the wines.
