Cellulose gum solution (CMC/ E466) intended for wine stabilisation in relation to potassium bitartrate crystallisation.

CELSTAB™ KP action results in an inhibition of microcrystal nucleation and growth phases (via disorganisation of the surface of the crystal, which arrests crystal formation).

  • For sparkling wines, incorporation should be carried out at tirage only (lower risk of gushing).
