  • Regulates the oxi-reduction phenomena.
  • Limits SO2 additions thanks to its anti-oxidant action.
  • Increases protein stability.
  • Reduces natural enzyme activity causing residual oxidation (laccase, tyrosinase).
  • Reduces bacterial development (as in Champagne traditional method).
  • Improves clarification.
